This is a post about how I am an awful baker. But in the spirit of my summer goal to learn lots of new things (more on that later, you know, after I learn things) and improve lots of skills slash talents, I have been baking. At one point we had tons of overripe bananas so I tried a Pinterest banana bread recipe that was just okay. I mean I'm sure the recipe was great, but what I made turned out only okay. For baking rounds two and three I used this recipe for chocolate chip cookies. I think it's Stefan's favorite thing I've ever made based on the number of cookies he has eaten both times, plus the rate at which he has eaten that (large) number of cookies.

Also for the record, cooking or baking of any kind is difficult in this tiny kitchen! There is basically no real counter space and also we have no microwave. So. Please note the hair dryer used to soften the butter and the upside down drying rack to cool the cookies.

^^^ I in fact did not have as many chocolate chips as the recipe calls for, but then I thought about how the chocolate chips I did have were jumbo sized and how Stefan and I had eaten a lot of jumbo chocolate chips in our pancakes for dinner the night before.. And I decided I didn't need to go buy more for the cookies.

And the recipe: 

3/4 cup salted butter (softened)
1/4 cup canola oil
1 cup sugar
1 cup brown sugar (packed)
2 eggs
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp vanilla
3 cup flour
1 1/2 cup chocolate chips

Preheat oven to 350.
Cream butter, oil, and sugars.
Add eggs. Beat until batter is fluffy.
Add baking powder, baking soda, salt, vanilla, and flour.
Fold in chocolate chips.
Roll cookies into 1 inch balls. Place on cookie sheet 2 inches apart.
Bake for 8-9 minutes.
(Maybe it's my pint size oven, but I baked mine for 10.)

So this has nothing to do with delicious cookie recipes... but I just found your blog. And you are the cutest. And I'm obsessed with travel, and reading, and everything. So I am probably about to spend the next few hours on here. Not a bad day. (also, I laughed when I realized how similar the looks of our blogs are. Promise I just discovered yours today, but just by looking at them, our blogs could be sisters)

I love your baking ingenuity and what deserves ingenuity more than fresh baked cookies? Nothing. Is there a Culinary Engineering degree at BYU?
